Roast Pork Rib

Soft and tender ribs with roasted vegetables, very easy to prepare and the oven doing all the work for you. Great for cold weather.

Ingredients

  • 1 Pack Pork rib
  • 6 Potatos
  • 4 Tomatos
  • 5 Onions
  • 8 Table spoons White wine
  • 4 1/2 Table spoons olive oil
  • 3 Tea spoons Salt
  • 2 Tea spoons Paprika
  • 2 Tea spoons Mixed herb
  • 2 Tea spoons Black pepper

Instructions

  1. Mix salt and some olive oil together. Spread it evenly onto the pork rib
  2. Peel all the potatoes and slice them into thin slices (~3mm)
  3. Clean all the onions and slice them into thin slices (~3mm)
  4. Clean all the tomatoes and slice them into thin slices (~4mm)
  5. Layer sliced potatoes, onions, and tomatoes onto a baking tray. Pour in the white wine evenly all over the vegetables, and then spread paprika, mixed herb evenly on top of the vegetables. Oven bake 210°C/410°F for 20mins. Please check regularly, as different oven might need different times.
  6. Take baked vegetables out of the oven once it is ~70% cooked, add pork rib on top and put pepper on both sides of the pork rib. Pour some olive oil on top to make sure pork rib will remain tender after baking. Oven bake 210°C/410°F for 25mins. Please check regularly, as different oven perform differently and might need different times.
