Victoria Sponge Cake

One of the most classic cakes. Sweet and soft, very easy to eat with a cup of tea.

  • 1 teaspoon baking powder
  • 2 Eggs
  • 80 grams caster sugar
  • 110 grams self-raising flour
  • 110 grams butter You need a bit extra to butter the sides of the container


  1. Put baking powder, butter, caster sugar, self-raising flour, and eggs into one big bowl. Mix all the ingredients together
  2. Melt some butter, brush it onto the sides and the bottom of the baking bowl. Cut a piece of baking paper and fit it to the bottom of the baking bowl
  3. Put the mixture into the baking bowl, preheat oven at 180 °C/356°F
  4. Bake at 180 °C/356°F for 15mins. Take the container out, use a knife to separate the cake edges from the container. Tilt the container upside down to get the cake out. Peel off the baking paper, let the cake cool down.
  5. Cut the cake in the middle very carefully, remove the top part of the cake. Add in jam and cream, put the top part of the cake back. Sprinkle some caster sugar on top of the cake. Ready to serve.
