I made some easy homemade egg noodles over the weekend for some friends. They were shocked at how easy it is to make noodles from scratch at home. So I thought I would show you how to make these yummy homemade egg noodles.
There are two ways of making egg noodles a t home and I included both methods in my Youtube video and the recipe at the bottom of this post. The first method is more hands-on and you do not need any equipment apart from a rolling pin and a sharp knife (which is available in all most everyone’s kitchen) . The second method is a ‘cheating’ method. It requires a pasta maker, but it is a lot easier and the noodles look a lot prettier.
This easy homemade egg noodle is the first episode of my new series – ‘how to get back to basics’. I want to share with you the things I love to make from scratch. Watch the space, more episodes are coming in the following weeks.
In case you are new here, printable recipe and Youtube video tutorial are always at the end of my posts.

Easy Homemade Egg Noodles
Easy Homemade Egg Noodles in two different ways. All you need is eggs and all-purpose flour. You will be shocked at how easy it is to make handmade noodles at home.
- 3 eggs medium sized
- 300 gram all-purpose flour
Mixed 3 eggs with 300gram of plain flour and knead the mixer well into a dough. If you are tired of hand kneading, you can use a stand mixer with a dough hook, to do the hard work for you.
Divide the dough into smaller sized doughs.
Use a rolling pin to roll out the dough until it is a thin sheet (dust with flour regularly). Fold the thin sheet forward and backward a few times. Use a sharp knife to cut the folded sheet into small strips. Unfold the strips to get noodles.
Use a pasta machine. Flatten the dough so that it can fit into the pasta machine’s roller. On the first pass, set the machine’s rollers to the level1 (the widest setting). Adjusted the roller width to a tighter setting and lightly dust the dough with flour before each additional pass. Repeat this process until the dough sheet is at your ideal thickness. (For me it is setting 5 on my pasta machine). Add the pasta cutting attachment, pass the dough sheet through to get noodles.
A few things that help
How to cook fresh noodles
Just throw the noodles in the boiling water. Same as how you would cook pasta! It doesn’t take long to boil fresh noodles. If you follow my recipe completely, noodles are normally ready in 5 mins. To assess if the noodles are ready, just take one out of the boiling water and bite into it. If it is soft and there is no visible dry flour in the middle of the noodle, then it is ready!
How to store noodles
Did you know you can freeze your fresh handmade noodles? It is super easy and I have done it multiple times. Remeber to dust enough flour on the noodles to make sure they won’t stick together and freeze into one piece.
How to cook frozen noodles
Easy! When you get it out of the freezer you see a hard frozen block. Do not defrost. Throw it the boiling water straight away.
It is the same as how you would cook fresh noodles, try to stir it and try to separate the noodles when possible (normally after 1 – 2mins, you can stick a chopstick through the frozen block and with a little force you can separate the noodles apart).
